The structure and properties of collagen and gelatin

Abstract

A review with 50 refs. covering, the structure of various collagen types, the nature of crosslinkingbonds, and methods for preparing partial collagen destruction products and collagen denaturation proteins, viz., gelatin. Gelatin gel structures are reviewed.
